Amuse Your Bouche's Three Cheese Mushroom and Sage Pizza

Method

1. Heat a dash of oil in a frying pan, and add the sliced mushrooms, garlic, sage, and a pinch of salt and pepper. Cook over a medium heat for a few minutes, until the mushrooms are soft and the garlic is fragrant.

2. Roll out the pizza dough, and place it on a greased pizza tray. Spread the dough with the ricotta, leaving a small crust around the edges. Sprinkle the finely grated parmesan all over the ricotta, then add the garlic mushrooms. Tear the mozzarella into a few chunks, and dot them over the pizza.

3. Using the fan oven setting, bake at 180°C for around 15 minutes, then turn on the bottom heat function, and bake for a further 5 minutes to crisp up the crust. Serve topped with more fresh sage if desired.

  • 200g chestnut mushrooms, sliced

  • Small handful fresh sage, chopped

  • 350g pizza dough (enough for one large pizza)

  • 2-3 tbsp ricotta cheese

  • 2-3 tbsp finely grated parmesan cheese

  • 80g fresh mozzarella cheese
